My Middle Eastern meatballs are packed with 29 grams of protein from 95% lean ground beef, Greek yogurt and whole wheat pita. This protein packed lunch will help keep you full and satisfied, preventing you from over eating later in the day. These lean meatballs are flavored with Middle Eastern spices and herbs from turmeric, cumin and parsley. For added moisture and flavor I topped the meatballs with a refreshing cucumber dill yogurt sauce. The flavor combination can’t be beat. Enjoy on a whole wheat pita for a perfect lunch or quick dinner.
- MEATBALLS
- 1 pound 95% lean ground beef
- 1/2 onion, finely chopped
- 1 egg
- 2 garlic cloves, minced
- 1 tablespoon parsely, minced
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- YOGURT SAUCE
- 2 cup plain greek yogurt
- 1/2 cup cucumber, skins removed and diced
- 2 teaspoon dill
- 1 garlic clove, mince
- 1/2 shallot, minced
- salt/pepper to taste
- Pita, lettuce and tomato for serving
- Preheat oven to 350 degrees.
- For the meatballs. In a large bowl, add all meatball ingredients and mix with hands to combine. Form meat into 1 inch balls. Place on a cookie sheet and bake in the oven for 15-17 minutes.
- While meatballs are cooking, prepare the yogurt sauce. In a medium mixing bowl add all yogurt ingredients and mix to combine.
- To assemble. Place lettuce tomato, 3-4 meatballs and top with yogurt sauce.
