Happy October 21st! This month’s recipe redux theme is “A Nutty Day” just in time for National Nut Day, which is tomorrow, October 22nd. Let’s just say I am nuts about nuts! They are the one ingredient that when added to a sweet or savory dish brings out a whole new flavor and provide a great texture and crunch. Nuts are also loaded with nutritional benefits including heart healthy mono-unsaturated fatty acids, fiber, protein, and loads of vitamins and minerals. You basically can’t go wrong with nuts.

Today I am sharing a quick and easy recipe that gives your favorite nut a fall flavor to help it pair well with just about any dish this time of year. My Maple Pumpkin Spice Roasted Walnuts are the perfect topping to a salad, your breakfast cereal, yogurt, and baked goods.  They also make a delicious snack. I made the mistake of leaving the leftovers on the counter and they have all disappeared. Good thing they only take 5 minutes to make! You could easily switch out the walnuts and use whatever other nut you have left over, or a combination of nuts if you are so inspired.

Maple Pumpkin Spice Roasted Walnuts

Ingredients
  • 1 cup walnuts (or other nut)
  • 3 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
Instructions
  1. In a small bowl mix together maple syrup, pumpkin pie spice, cinnamon and salt.
  2. In medium sauce pan over medium heat add nuts then add maple spice mixture. Mix and continue to stir for 4-5 minutes, until liquid is evaporated. Remove nuts from heat and lay out flat on parchment paper to cool.
  3. Enjoy warm to store in an airtight container.
