Whip up a batch of these Blender Peanut Butter Banana Oatmeal Bars for a whole grain on-the-go breakfast, snack or treat!

I originally posted this recipe back when I was about 7 months pregnant and craving all things peanut butter, bananas and chocolate. And since having my son nothing has really changed in the past 2+ years except that I have made this recipe now over a dozen times. When I was nursing I would go through a batch a week. I added in some extra flax seed and brewer’s yeast to help increase my milk supply. And today I make them every so often with my son to have as a snack or with breakfast.

Over the past 2 years I have also gotten a new camera and practiced my food photography a bit more and really wanted to update these photos so I did! It may have also been an excuse to make the recipe again 😉

Blender Peanut Butter Banana Oatmeal Bars

Ingredients
  • 2 cups old fashioned oats ( 1 1/2 cups oat flour) *
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup low fat milk
  • 1 egg
  • 2 bananas
  • 1/3 cup peanut butter
  • 1/2 cup semi-sweet chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees. Spray 8×8 baking pan with cooking spray.
  2. In a blender or food processor add all ingredients, except chocolate chips. Blend/process until smooth.
  3. Stir in chocolate chips if using with a spatula or spoon.
  4. Add mixture into prepared baking dish.
  5. Bake for 25 minutes or until inserted toothpick comes out clean.
